About this Job

- To administrate the kitchen effectively and efficiently in the absence of the Executive Chef

- Reports to the Executive Chef

- Understands the importance of food costs and helps plan the menus, in conjunction with the Executive Chef while taking advantage of the seasonal fluctuations of the market

- Observes the standards and procedures set forth by the Executive Chef

- Ensures that all food is prepared to established standards

- Helps prepare menus and test products for the menu's with the Executive Chef

- Establishes stock levels, orders stock and perform daily forecasts.

- Understands the importance of labour costs and schedules and supervises colleagues to operate at peak efficiency

- Responsible for training, teambuilding and motivation of colleagues

- Conducts colleagues meetings and retraining

- Monitors equipment and reports any irregularities or defects to the Executive Chef

- Implements and maintains safety standards and sanitation codes as established by government regulations

- Communicates with other departments to determine the related needs of other outlets

- Other job related duties as assigned by supervisor

- Oversees preparation and dish-ups and supervises the preparation colleagues and participates in preparation and dish-ups as required.

In the absence of the Executive Chef prepares schedules and places orders

- Preferred knowledge and Qualifications:

- Completion of a culinary apprenticeship program

- Minimum 5 years cooking experience in quality establishments providing similar service, with experience in all areas of kitchen, i.e. Banquets, fine dining, all day dining

- Previous supervisory experience in an established hotel in a Sous Chef capacity or a Senior Chef de Partie who is ready for further development

- Ability to make independent decisions
